Gongfu tea is short for Kung Fu black tea. Kung fu black tea is one of the three production processes of black tea, and the black tea produced by the production process of Kung fu black tea becomes Kung fu black tea. Kung Fu black tea technology generally includes four steps: withering, rolling, fermentation and drying. It is a black tea production technology derived from Zhengshan race production technology after simplification and improvement, and it is also the most variety, largest output and most widely distributed black tea production technology at present.

Kungfu tea is a kind of tea art, which is a traditional tea drinking custom unique in Chaoshan area of Guangdong and Minnan area of Fujian. Therefore, it is also called Chaoshan Kungfu tea, which is a national intangible cultural heritage. Traditional Chaoshan kungfu tea includes 21 procedures, such as preparing utensils, making fire, roasting tea, warming pot, moistening tea and ordering tea. It has a set of very particular tea drinking etiquette for tea set, tea, water, brewing and tea tasting. Because Chaoshan and Minnan mainly drink oolong tea, kungfu tea is mainly the skill and procedure of brewing oolong tea.

Therefore, the "effort" in congou tea means that it takes time and energy to make this kind of black tea, and it takes effort to control the process to make good tea; The "Kung Fu" in "Kung Fu Tea" emphasizes that this custom of drinking tea is a very particular and standardized procedure and tea ceremony. There is a big difference between the two, so don't use it wrong.

What is Kung Fu black tea?
Kung fu black tea is a unique kind of black tea in China, which is based on the traditional production technology of small-scale black tea and is a simplification and development of small-scale black tea technology. Kung Fu black tea is widely distributed in China. Twelve of the 19 tea-producing provinces produce Kung Fu black tea, among which Qimen Kung Fu, Xianghong, Minhong, Dianhong and Yihong are famous.

The characteristics of Kung Fu black tea should be summarized by Bao Xiaocun, the chief expert of Hunan tea industry technology system, as "nectar fragrance, sweet flavor, red soup and red leaves". The color is black and oily, showing the splendor of gold, the fragrance of flowers and honey blends, the taste is sweet, fresh and mellow, and the soup color is orange and bright.

How to brew Kung Fu black tea
It is better to use white porcelain to cover the bowl for the brewing of Kung Fu black tea. When drinking, you can drink tea soup directly, or you can add milk, honey, lemon, etc. Generally, cup-covering brewing is divided into four steps: cup warming, tea pouring, water filling and soup discharging:

Warm cup: it is suitable to cover the bowl, and the volume is generally 100-150mL. Pour boiling water into Gai Bowl and fair mug, warm the cup and pour it out.

Tea: Take a proper amount of black tea. Generally, the ratio of tea to water is between 1:50 and 1:100, that is, put about 2 grams of black tea into a 110mL bowl, and the delicate tea can be slightly increased. The specific amount of tea can be adjusted according to the specific situation of tea lovers.

Water injection: inject boiling water, the water temperature is generally controlled at about 85 degrees, and add water to the bend of the bowl cover. Too much water will cause hot hands when the soup is served.

Soup: Brew for about 10 seconds, and drain all the tea soup to fair mug by low pouring.

After the soup is served, you can drink tea separately.
